Blog Post: Homemade Granola

I absolutely LOVE Love Grown granola! Raisin Almond is my favourite kind but click here to check out the other products that they offer. I ran out of granola one day and decided to check out what I had in my cupboards (honey, GF oats, shredded coconut, nuts, etc.) instead of running out to the grocery store for one item. I thought – I can try to make some of my own! Good news folks, it turned out wonderfully, and I want to share the recipe with you because it’s just so dang yummy.

Toasted Coconut Granola

Omg this stuff is so good that I just bought more ingredients to make a second batch over the weekend. Only 45-minutes from start to eat. Hope you enjoy! Tag me in your pics when you try this recipe out.

Here’s what I used but feel free to change things up and play around with it to suit your needs & likes:

  • 3 cup gluten-free oats
  • 3/4 cup shredded, unsweetened coconut
  • 1/4 cup slivered almonds
  • 1/4 cup hulled sunflower seeds
  • 1/2 cup pecans
  • 1/2 cup honey (going to try maple syrup instead for my batch this weekend)
  • 3 TBSP oil of your choice- I used sunflower -would probably be SO GOOD with coconut oil too
  • 1/4 tsp of salt
  • You can add cinnamon- I just didn’t have any on hand

Preheat oven to 300, mix all ingredients in a bowl making sure to coat everything evenly with your honey or maple syrup. Spread the mixture onto a greased baking sheet (or line with parchment paper) if you like big hunks of granola, keep the mixture closer together on the sheet and pack it down lightly with a spatula. Bake for 10 minutes, stir halfway, then bake for another 10 minutes. Allow it to to cool at room temperature for 20 minutes before storing in a ziploc bag OR before serving.
